About lecithin
The name lecithin is derived from the ancient Greek word λἐκιθος [Iekithos], meaning egg yolk *1 , but soybeans are said to be the main source of lecithin commercially used in food *2 .
Soy lecithin can be easily extracted chemically or mechanically from the raw material soybeans, and is composed of a mixture of phospholipids, glycolipids, neutral lipids, and sugars. There are three main types of phospholipid mixtures: phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol *3 *4 .

Soy lecithin is a source of choline, an essential nutrient for us. Choline can be supplemented through several types of foods as well as supplements.
Evidence obtained so far suggests that lecithin and choline, or phosphatidylcholine, contained in lecithin may play a role in memory and cognitive functions in addition to liver function. *3*4 .
Naturally ™ High Lecithin® with meals
The soy lecithin used in Naturally ™ High Lecithin® is highly concentrated in phospholipids. The phospholipids are present in the original composition of soybeans (typical values: 23% phosphatidylcholine, 20% phosphatidyltanolamine, 14% phosphatidylinositol).

Phosphatidylcholine is contained in a variety of foods, but in order to ensure that you are consuming plenty of it on a daily basis, it is ideal to use it in conjunction with a high-purity soy lecithin product (Table 1).
